Nourrir la machine humaine : nutrition et alimentation au Québec, 1860-1945
Abstract
The author traces how nutrition has contributed to the modernization of Quebec during a period marked by industrialization, urbanization, two world wars and a major economic crisis. One chapter, titled "Les Montréalaises à l’école de la nutrition, 1900-1914", explains the differences between how Anglophone and Francophone women were taught about nutrition. For Francophone Quebecers, Catholic values ​​were inculcated: graduates were encouraged to use their knowledge in a family context to support their husbands and raise their children. Few become professional nutritionists. English-speaking graduates, the author explains, having also benefited from their cooking classes, obtained jobs in the cafeterias of health or school establishments.
