Abstract
In June 1813, James McCallum purchased the St-Roc Brewery in Quebec City. By the early 1820s the brewery was being operated by McCallum and Sons, composed of James and his sons, James Jr., Duncan and Colin. McCallum and Sons was dissolved in 1822. In 1840, Duncan opened the McCallum Brewery, located on the north side of Saint-Paul Street, immediately east of the current Old Port market. On the other side of the street was St-Roc Brewery, owned by his brother Colin. Colin's brewery was short lived, but Duncan continued on with his brewery until 1847, when he turned it over to another brother, Daniel, who operated it until 1874, ending the McCallum family brewing business. The author examines the way beer was manufactured in Quebec, on those who made it, on the fluctuation of prices as well as the facilities and the difficulties to produce this commodity in an economy still largely dependent on the metropolis.
