Abstract
An examination of the political, administrative, and cultural issues relating to the consumption of alcohol in taverns, inns, and coffeehouses in Quebec in the years between the Conquest (1760) and the American invasion of Quebec (1775). By focusing on these fifteen years following the Conquest, the author proposes, firstly, to establish the changes that modulate between the installation of wealthy establishments and more modest establishments. He examines the question of the relationships that the new colonial state maintained with these establishments, which were perceived by authorities as a danger to popular mores. Secondly, the author looks at the breaks and the continuities between the frequentation of inns, cabarets and private salons which took place under the French Regime and the new practices and customs imported under the English Regime.
