The author describes the recipes for squash and for pumpkin found in Constance Hatton Hart’s “Domestic Cookery, by a Montreal Lady,” published in 1865. The author point out that Constance Hatton Hart (1826-1898) was a descendant of the Hart’s who arrived in Trois-Rivières in 1763.
