| Abstract |
An internationally recognised symbol of Quebec cuisine, smoked meat holds a special place in Montreal’s culinary identity. Whilst the history of this dish and the establishments that have ensured its success is well documented, the origins of the term ‘smoked meat’ itself remain unclear. Dictionaries published to date are no exception and offer little insight. Many questions therefore remain unanswered. Does this Quebecism originate from the United States? Is it modelled on Yiddish? Since when has it been used in Quebec French? Is it now a fully established Anglicism? The authior sheds some light on a few of these persistent grey areas.
